Pacific Chill
The Story
Pacific Chill began with a detox smoothie. Cavallier Belletrud has said he ordered one in Los Angeles while talking with the artist Alex Israel, and set out to put the effect of that drink into a cologne, which is why it runs on mint, black currant, carrot seed and basil rather than a standard citrus structure.
Citrus
First bright zest of morning

Citron
The ancient knobbly citrus of dry, green light
What it is
Citron is Citrus medica, one of the oldest cultivated citrus species and a genetic ancestor of the lemon. The large, oblong fruit is mostly thick, knobbly, leathery rind with little juice; its essential oil, called cedrat, is cold-pressed from that fragrant peel.
How it smells
Tangy and sparkling like lemon but rounder and more velvety, with light floral nuances and a clean, dry bitterness. It opens crisp and zesty, then reveals a subtle, refined citrus edge that feels less acidic and more polished than common lemon.
In perfumery
A bright top note bringing dynamic, uplifting freshness and a dry citrus facet to colognes and modern citrus accords. It pairs naturally with neroli, petitgrain and herbs, and gives its name, under the French term cedrat, to a whole genre of cedrat scents.
Good to know
The fingered citron variety, Buddha's hand, splits into tendril-like segments and is used in religious offerings across Asia. A separate citron cultivar, the etrog, is one of the four sacred plants of the Jewish autumn festival of Sukkot.
Orange
Sun in the rind, bright and bittersweet
What it is
Orange comes from Citrus sinensis, the sweet orange tree cultivated across the Mediterranean, Brazil and Florida. The aroma material is cold-pressed from the peel, where tiny glands hold the essential oil. Bitter orange and its blossom and leaves yield separate materials such as neroli and petitgrain.
How it smells
Bright, juicy and immediately recognizable: sweet pulp over a zesty, slightly bitter rind. It opens sparkling and effervescent with a sunlit tang, then softens into a rounder, candied sweetness. Compared with lemon it is warmer and less sharp, more rounded and sugary on the skin.
In perfumery
Almost always a top note, prized for a radiant, cheerful burst that fades within an hour. It pairs with neroli, bergamot, clove and warm spices, and anchors classic colognes and gourmand openings. It sparkles in Atelier Cologne Orange Sanguine and countless traditional eaux de cologne.
Good to know
Citrus oils are highly volatile and oxidize quickly, which is why orange-heavy fragrances feel brilliant but brief. Cold-pressed sweet orange peel oil carries almost none of the furocoumarins behind citrus photosensitivity, so unlike bergamot, lime or bitter orange it is not treated as phototoxic in sunlight.
Lemon
Cold yellow zest snapping into bright sun
What it is
Lemon is the fruit of Citrus limon, a small evergreen tree grown around the Mediterranean, especially Sicily and Calabria, and in California. The aromatic oil sits in tiny glands in the colored peel and is cold-pressed mechanically from the rind, a squeezing and scraping rather than distillation.
How it smells
Sharp, juicy and instantly recognizable, a cold bright zest with sparkling sourness. The opening is tart, green and effervescent, driven by limonene and citral; beneath sits a faint sweet pith and a clean, slightly waxy peel facet. It is fleeting, fading within minutes.
In perfumery
A classic top note prized for lift, freshness and instant cleanliness, it powers the eau de cologne tradition alongside bergamot, neroli and petitgrain. Because it evaporates fast, it is often reinforced with citral. It defines the great classic colognes and the bright, sparkling opening of countless fresh fragrances.
Good to know
Cold-pressed lemon oil contains photosensitizing furocoumarins that can trigger sun-induced skin burns, so perfumers often use a furocoumarin-free version. It also oxidizes quickly, turning harsh and turpentine-like, which is why citrus fragrances are notoriously hard to keep stable in the bottle.
Mint
A cold green rush that clears the head
What it is
Mint oils are steam-distilled from the leaves and flowering tops of Mentha herbs, chiefly peppermint (Mentha piperita) and spearmint (Mentha spicata), cultivated in the United States, India and Europe. The fresh or wilted herb is distilled; cornmint (Mentha arvensis), the main industrial source of natural menthol, is then partially dementholised to crystallise the excess out.
How it smells
Peppermint is piercing, cool and almost icy from its high menthol content, with a sharp camphor-medicinal edge. Spearmint is softer, sweeter and rounder, herbal and faintly fruity from carvone, without the cold bite. Both read green and watery before drying to a clean herbal hum.
In perfumery
A volatile top note used for freshness, coolness and a crisp herbal lift, mint flickers through fougeres, colognes and aromatic-fresh masculines. It pairs with lavender, basil, citrus and chocolate, and drives bracing minty openings in many sport-fresh blends.
Good to know
Menthol triggers the skin's cold-sensing TRPM8 receptors, so mint reads cold even when it is not, the same trick used in toothpaste and chewing gum. Much commercial menthol is now made synthetically at industrial scale, notably by Takasago, alongside the large volumes still distilled from cornmint in India.
Black Currant
Tart purple berries with a sly catty growl
What it is
Black currant is the small dark berry of Ribes nigrum, a shrub native to northern Europe and Asia. Both berries and aromatic buds (cassis) carry the scent; an absolute is solvent-extracted from the buds, while the fruit facet in perfumery is usually rebuilt with aroma-chemicals.
How it smells
Sharp, juicy and tart, a burst of purple-red berry with green leafy edges and a wine-like depth. Its hallmark is a sulphurous, faintly sweaty, animalic catty undertone that keeps it from reading as merely fruity. It opens fresh and biting, then sweetens into jammy darkness.
In perfumery
A top-note material adding fruity sparkle, tartness and a mischievous edge to florals and chypres. The bud absolute deepens rose and lends a green-fruity lift. It headlines bright fruity-floral openers and powers the celebrated cassis-rose accord at the heart of dark, velvety chypres.
Good to know
The signature catty smell comes from sulphur-containing thiol molecules, the same family that gives buchu, grapefruit and tomcat spray their pungency. At a few parts per million these thiols read as ripe fruit; concentrated, they turn startlingly skunky and sharp.
Coriander
Green seed warmth turning soft and woody
What it is
The dried ripe seeds of Coriandrum sativum, an annual herb in the carrot family grown across Eastern Europe, Russia and India. Crushed seeds are steam-distilled into an essential oil dominated by linalool. The fresh leaf, called cilantro, smells entirely different and is rarely used in perfume.
How it smells
Warm, sweet and softly spicy, with a peppery, woody lift and a faint citrus-floral edge from its high linalool content. It opens fresh and green-aromatic, then dries into a rounded, slightly aldehydic warmth recalling lavender, rosewood and a hint of gingerbread.
In perfumery
A top-to-heart note adding freshness, spice and lavender-like roundness to fougeres and aromatic men's scents, paired with bergamot, lavender, geranium and ambery bases. Coriander is a classic heart note in many vintage citrus-aromatic and spicy compositions.
Good to know
Coriander is among the oldest cultivated spices, with seeds recovered from Egyptian tombs including Tutankhamun's. Because the seed oil runs up to seventy percent linalool, it gives perfumers a natural, gentler-smelling source of that molecule than the isolated synthetic.
Apricot
A stone-fruit accord built, never extracted
What it is
The apricot fruit yields no usable essential oil or absolute, so every apricot note in perfumery is a constructed accord. The aroma-chemical route builds it from lactones, chiefly gamma-undecalactone and gamma-decalactone, lifted with fruity esters. An all-natural route reconstructs it from botanicals instead, leaning on osmanthus absolute for its dried-apricot and leather facets and davana oil for jammy stone-fruit warmth.
How it smells
Velvety and sun-warmed, with the blush of ripe skin and a creamy, faintly waxy weight underneath. The lab-built version is brighter and more linear, holding one confident apricot shape from opening to dry-down. A naturals-only reconstruction reads hazier and softer, threaded with tea and honey from the osmanthus, and drifts as it wears.
In perfumery
Apricot sits in the top and heart of fruity-florals, chypres and gourmands, adding plush sweetness and a sunlit lift. The lactone route blends predictably and gives reliable volume at any price. The botanical route is dosed with restraint, since osmanthus and davana are costly and harvest-dependent, and it tends to be treated as a centerpiece.
Good to know
Neither route contains apricot. The tell is behaviour rather than brightness alone: a lab build stays put and projects, while a botanical reconstruction is quieter, less stable, and varies with the harvest. Osmanthus and davana also appear in mainstream formulas, so their presence is no proof of an all-natural composition.
Basil
Green pepper-sweet leaf, just-bruised and alive
What it is
Basil (Ocimum basilicum) is an annual herb in the mint family, native to tropical Asia and Africa and now grown across the Mediterranean, Egypt and India. Its essential oil is steam-distilled from the flowering tops and leaves, with linalool and methyl chavicol as the principal constituents.
How it smells
Fresh, green and aromatic, opening with a peppery, slightly anisic bite over a sweet herbal lift. Linalool-rich grades feel soft and faintly floral, while estragole-heavy ones turn sharper and licorice-like. It dries down warm, spicy and a touch minty, evoking a bruised garden leaf.
In perfumery
A top note prized for crisp green vibrancy and a fresh herbal jolt that animates citrus openings and aromatic fougeres. It pairs with bergamot, lavender, geranium and vetiver. It is often threaded through a spicy heart, lending a clean, leafy lift beneath the citrus.
Good to know
The name traces to the Greek basilikon, meaning royal, and the herb held sacred status across cultures, from Hindu tulsi to Mediterranean folklore. Methyl chavicol (estragole), basil's anisic component, is restricted under IFRA for safety, so high-estragole oils are dosed sparingly in fine fragrance.
Carrot Seeds
Earthy roots and powdery violets from the field
What it is
The dried seeds of Daucus carota, wild carrot, an umbellifer grown around the Mediterranean and in France and Hungary. The seeds are steam-distilled for several hours into an essential oil dominated by carotol, a sesquiterpene alcohol that can make up well over half its weight.
How it smells
Earthy, dry and woody with a powdery, root-like character. Beneath that runs an unexpected violet-and-iris sweetness from trace ionones, plus a faint fruity hint of fresh carrot root. It opens dusty and herbaceous, then settles into a soft, ambrette-like powderiness.
In perfumery
A heart note prized as an affordable orris substitute, lending iris-violet powder and earthy depth. It pairs with iris, violet, ambrette, oakmoss and woods in chypres and powdery florals, extending costly orris in iris-forward styles like rooty, makeup-powder masculine compositions.
Good to know
Genuine orris butter, the iris-root material carrot seed imitates, can exceed twenty thousand dollars a kilo after years of root-aging. Steam-distilled carrot seed oil delivers a similar powdery, noble-root effect for a tiny fraction of that cost, which helps keep iris accords affordable.
May Rose
Dawn-picked Grasse rose, jammy and green
What it is
May Rose, or Rose de Mai, is the absolute of Rosa centifolia, the hundred-petalled cabbage rose, picked only during its brief May bloom around Grasse and now also Morocco and Egypt. Fresh petals are solvent-extracted into a waxy concrete, then washed with alcohol to yield the deep absolute.
How it smells
The scent is rounder and softer than Bulgarian damask rose, honeyed and jammy with green, peppery, slightly spicy facets. It opens fresh and dewy, like petals at dawn, then settles into a rich, warm, faintly fruity floral with a clean, almost tea-like clarity and no harsh edge.
In perfumery
A precious floral heart, May Rose adds natural roundness, radiance and a velvety petal quality, pairing classically with jasmine, aldehydes, iris and patchouli. It was woven into the heart of one of the foundational aldehydic florals of the 1920s, and it defines countless soliflore roses and Grasse-sourced creations.
Good to know
Yields are brutal: it takes hundreds of kilograms of hand-picked centifolia petals, gathered from before sunrise into mid-morning, before the sun thins their oils, to produce a single kilogram of absolute that can cost several thousand euros, ranking it among the most expensive florals in perfumery.
Fig
Green milky leaf over warm sunlit fruit
What it is
Fig as a note draws on the whole tree, Ficus carica, native to the Mediterranean and western Asia. The fruit yields little usable oil, so the scent is largely reconstructed from fig leaf extracts and aroma molecules like stemone, capturing leaf, milky sap, bark and ripe fruit together.
How it smells
Green and lactic at the top, like a snapped fig leaf weeping bitter white sap, over a soft, milky, coconut-tinged sweetness of warm ripe fruit. Underneath runs a woody, almost cedar-like dryness. The effect is shady, leafy and sun-warmed, more garden than fruit bowl.
In perfumery
A versatile note spanning green top, milky heart and woody base, prized for a fresh yet creamy Mediterranean feel. It pairs with coconut, cedar, milk and citrus. A pair of mid-1990s niche releases defined the modern fig accord and made it a niche signature.
Good to know
The fig boom traces largely to one aroma molecule, stemone, a green leafy material that let perfumers finally render fig leaf realistically. Before it, true-to-life fig was nearly impossible, which is why almost no fig perfumes existed until the first fragrance built around the note, in 1994.
Dates
Sticky sweetness of sun-dried desert fruit
What it is
Dates are the fruit of the date palm, Phoenix dactylifera, cultivated across North Africa and the Middle East for millennia. The drupes ripen to deep amber-brown and concentrate sugar as they dry. There is no true date essential oil; the note is built as an accord from fruity, dried-fruit and caramelic aroma materials.
How it smells
Warm, syrupy and brown-sweet, like a pressed Medjool date: honeyed molasses with prune and fig facets, a faint rummy boozy edge and a leathery, almost tobacco-like depth underneath. It reads jammy and sticky rather than fresh, finishing dry and caramelized.
In perfumery
A heart-to-base sweetener lending oriental and amber compositions a dried-fruit roundness. It pairs naturally with amber, oud, rose, honey and warm spices in Middle Eastern styles, and adds chewy fruit warmth to gourmand orientals built around figgy or boozy amber bases such as those in the attar tradition.

Date palms have nourished desert civilizations for over six thousand years, appearing in ancient Mesopotamian tablets and the Quran. A single mature palm can yield over a hundred kilograms of fruit a year, which helped earn the species its old epithet, the tree of life.
Ambrette
Plant musk pressed from a mallow seed
What it is
Ambrette is the seed of Abelmoschus moschatus, a hibiscus-like mallow plant native to India and grown across tropical Africa, Asia and South America. The small, musky-smelling seeds are steam-distilled or CO2-extracted to yield an oil whose musk comes from ambrettolide, a macrocyclic lactone that makes up only a small fraction of it.
How it smells
Soft, warm and genuinely musky in a way no synthetic quite matches: powdery and skin-like, with a sweet, slightly nutty amber facet and a fruity pear-and-iris floralcy. It feels velvety and human, smoother and rounder than synthetic musks, blooming slowly into a clean, intimate warmth.
In perfumery
A base note and exalting fixative, the finest plant-derived musk available to perfumers. It lifts and rounds blends, adding skin-like sensuality to florals, iris and gourmands. Classic aldehydic florals and modern musk compositions use it to give natural muskiness without animal sources.

Ambrette became vital after nitro-musks were restricted and animal musk fell from use, offering a rare botanical alternative whose ambrettolide is chemically akin to muscone. Yields are tiny, making it one of the costliest naturals and a quiet luxury hidden in many fine perfumes.
