Adonis was the mortal youth whose yearly return from the underworld the Greeks read as the turn of the season, and the name fixes this one at the moment of waking rather than at full bloom. Argos builds it as rose and fruit over creamy woods, kept luminous rather than heavy.

Bergamot is a small citrus fruit, Citrus bergamia, grown almost entirely along the Calabrian coast of southern Italy. The aromatic oil sits in glands in the rind of the unripe green-yellow fruit and is cold-pressed mechanically from the peel rather than distilled, preserving its fresh brightness.
How it smells
Bright, zesty and green, a sweet citrus sparkle softened by a floral, almost tea-like smoothness. Underneath runs a faintly bitter, balsamic warmth that sets it apart from lemon or orange. It flashes lively on opening, then fades quickly into a soft, slightly spicy hum.
In perfumery
The classic top note, bergamot adds freshness and lift while blending sharp citrus into the heart. It defines eau de cologne and the fougère family, harmonizing with lavender, neroli and oakmoss. It opens countless modern fresh-floral compositions, and its oil gives Earl Grey tea its scent.
Good to know
Natural bergamot oil contains bergapten, a furocoumarin that makes skin highly sensitive to sunlight and can cause burns. IFRA caps how much expressed bergamot oil a leave-on product may carry, so perfumers either dose within that limit or reach for a furocoumarin-free (FCF) grade.
Grapefruit
Bitter-bright citrus burst with a sulfurous tang
What it is
Grapefruit oil is cold-pressed from the peel of Citrus paradisi, a large subtropical citrus that arose as a natural hybrid of pomelo and sweet orange in the Caribbean. Mechanical expression ruptures oil glands in the rind, releasing a fragrant oil rich in limonene with trace nootkatone and sulfur compounds.
How it smells
Sharp, juicy and effervescent: tart citrus with a distinctive bitter rind edge and a faintly sweaty, sulfurous tang that reads as true grapefruit. It opens with a fizzy, mouth-watering brightness, then fades quickly, leaving a clean, slightly soapy and bitter-green impression behind.
In perfumery
A top note delivering an instant burst of freshness and a modern, slightly bitter sparkle, pairing with neroli, mint, vetiver and woody-amber bases. It is the bright opening of countless citrus-forward colognes, pomelo-themed eaux and many contemporary sport and unisex scents.
Good to know
Grapefruit's signature smell comes mostly from trace molecules: nootkatone and grapefruit mercaptan (1-p-menthene-8-thiol), the latter detectable at a fraction of a part per trillion. The oil is phototoxic from furocoumarins, so it is often used in furocoumarin-free form or capped under fragrance-safety guidelines.
Pink Peppercorn
Bright rosy berries with a sparkling spice fizz
What it is
Pink pepper is the dried berry of the Peruvian pepper tree Schinus molle, native to the Andes and a member of the cashew family Anacardiaceae, not a true pepper. The rose-colored berries are steam-distilled or CO2-extracted into an oil dominated by alpha-phellandrene, limonene and pinene.
How it smells
Bright, dry and sparkling, more rosy and fruity than black pepper, with only a soft prickle of spice. Crushed-berry, juniper-like resin and faint citrus facets give a fizzy, airy lift. It flashes peppery on top, then fades quickly into a gentle warm spiciness.
In perfumery
A favoured top-to-heart note that adds effervescent spice and a rosy glow without heat or bite. It brightens florals, freshens woods and ambers, and pairs with rose, bergamot and patchouli. Its sparkle opens many modern scents, notably the tea-and-bergamot top of bright fruity-floral bombs.
Good to know
Despite the name, these berries are botanically unrelated to true pepper, Piper nigrum; the resemblance is purely aromatic. As an Anacardiaceae cousin of cashew and mango, Schinus can trigger reactions in people sensitive to that family, so culinary use of the berries is best in moderation.
Bulgarian Rose
The fresh dawn breath of the Rose Valley
What it is
The flower of Rosa damascena, grown chiefly around Kazanlak in central Bulgaria's Rose Valley. Blossoms are hand-picked from before sunrise into the morning, then either steam-distilled into rose otto or solvent-extracted into a deep-red absolute. Roughly three to four tonnes of blossoms yield a single kilogram of otto.
How it smells
Bright, dewy and honeyed, with a green lemony lift on top over a spicy, velvety heart. Compared with Turkish rose it reads fresher and clearer. As it settles, a faint clove-like warmth and a waxy, black-tea softness surface beneath the petals.
In perfumery
A heart note prized for transparency and natural radiance, paired with patchouli, oud, sandalwood or fruity notes like lychee. The otto can crystallise in cool weather. It anchors many of the great rose-centered compositions, lending lifelike floral depth.
Good to know
Harvest runs only three to four weeks from mid-May into June, and pickers work before sunrise because the day's heat evaporates the volatile oils. That tiny, weather-dependent window, plus the tonnes of blossoms needed per kilo, makes rose otto one of perfumery's costliest naturals.
Jasmine Sambac
The white flower of warm Eastern nights
What it is
Jasmine Sambac is a climbing shrub, Jasminum sambac, in the olive family, cultivated in India, China and the Philippines. Its small white flowers open after dusk, when their scent peaks, and the buds are hand-picked in the early morning, before they unfurl. Solvent extraction yields a waxy concrete, washed with alcohol into the absolute.
How it smells
Brighter, greener and more tea-like than grandiflorum jasmine, with less fruity heaviness. It opens crisp and slightly waxy, almost banana-tinged, then deepens into warm indolic sweetness. That indole carries an animalic, narcotic undertone that turns heady up close yet stays clear and luminous.
In perfumery
A heart note prized for lift and body, blending with rose, tuberose, sandalwood and green tea accords. It anchors white-floral bouquets and rounds sharp citrus. Some night-blooming soliflores build almost entirely on Sambac, and it threads through countless tea-floral compositions.
Good to know
Sambac is the Philippine national flower, sampaguita, strung into garlands and used to scent Chinese jasmine tea. Because the blooms are tiny and picked by hand every morning across a long season, the absolute ranks among the costliest florals in a perfumer's palette.
Vanilla
The warm sweet heart of comfort itself
What it is
Vanilla comes from the cured seed pods of Vanilla planifolia, a climbing orchid native to Mexico and Central America, now grown mainly in Madagascar and Indonesia; the vanilla of Tahiti is a different species, Vanilla x tahitensis. Green pods are picked unripe, then blanched, sweated in the sun and slow-dried over months until they darken and develop their aroma and vanillin.
How it smells
Sweet, warm and creamy, with a balsamic depth recalling custard, caramel and dried fruit, a faint smoky tobacco-like edge sitting underneath. It opens soft and gourmand, then dries into a powdery resinous warmth that clings close to skin and reads richer than synthetic vanillin alone.
In perfumery
A base note prized for richness and lasting warmth, vanilla rounds sharp edges and anchors oriental and gourmand compositions. It pairs naturally with tonka, amber, sandalwood and spice. Many of the most enduring oriental and tobacco fragrances build their core around it.
Good to know
Vanilla ranks among the costliest spices because each orchid flower opens for one day and must be hand-pollinated, a technique devised in 1841 by Edmond Albius, a twelve-year-old enslaved boy on Réunion. Most commercial vanilla flavor now relies on synthetic vanillin.
Raspberry
A berry conjured, since none can be extracted
What it is
There is no raspberry essential oil or absolute, so the note is always a construction. The lab route rests on raspberry ketone, also sold as frambinone, with beta-ionone bridging berry and violet and furaneol supplying cooked-fruit sweetness. A naturals-only route reaches for boronia absolute, which smells of raspberry jam and tea, alongside davana, rose and violet leaf.
How it smells
Ripe and jammy, sweet rather than sharp, with a powdery floral shadow that surfaces as it settles. The lab build is brighter and a little candied, vivid on first spray and steady in shape. A botanical reconstruction reads warmer and wilder, threaded with green and rosy nuances, softer at the edges and shifting as it dries.
In perfumery
Raspberry runs through fruity-florals and gourmands, pairing with rose, violet, patchouli, vanilla and white musks. Raspberry ketone is unusual among fruit materials for its tenacity, holding into the dry-down where most fruit notes have already gone. Boronia is scarce and expensive, so botanical versions appear mostly in small, hand-poured work.
Good to know
Raspberry leaf absolute does exist, but it smells green and leafy rather than of fruit and is not a substitute. Neither route puts raspberry in the bottle. The aroma-chemical version is loud, stable and repeatable, while the botanical version is quieter, drifts with the harvest and cannot be matched exactly between batches.
Chestnut
Roasted shells split open over winter coals
What it is
The edible seed of trees in the genus Castanea, beech-family deciduous trees of the temperate Northern Hemisphere. Roasting yields almost no extractable oil, so the perfumery note is built rather than distilled, reconstructed from aroma molecules that mimic the warm cooked nut and its starchy flesh.
How it smells
Warm, nutty and faintly sweet, the roasted seed sitting closer to fresh bread than to almond. A creamy puréed softness rounds the middle, threaded with light caramelized smoke and earthy starch. It dries toward woody warmth rather than fading bright or sugary.
In perfumery
A heart-to-base gourmand note adding cozy warmth, body and staying power rather than sparkle. It pairs naturally with vanilla, caramel, chocolate, woods, leather and spice, anchoring autumn and dessert compositions and the candied marron-glacé facet beloved in winter gourmands.
Good to know
Because the cooked nut surrenders so little extractable aroma, the note is assembled chemically from lactones, pyrazines and caramelized-sugar analogues. Perfumers chase the feeling of chestnuts roasting over coals rather than any literal botanical extract, making it an imagined scent-portrait.
Mysore Sandalwood
The creamy gold standard of fragrant wood
What it is
Heartwood of Santalum album, a slow-growing semi-parasitic tree historically prized from the Mysore region of Karnataka, India. The dense inner wood and roots are chipped and steam-distilled. Fragrant oil concentrates in the heartwood, which begins to scent the wood at around ten years and deepens with age; a tree is seldom worth taking before fifteen or twenty.
How it smells
Soft, creamy and milky, with a rounded woody-sweet body and a faint sour-buttery edge that turns almost lactic. Warm rosy and balsamic facets sit underneath. It opens smooth and unfolds slowly, drying into a quiet, skin-like, persistent woodiness without sharpness or smoke.
In perfumery
A base note valued for long, smooth tenacity and its power to fix and round other materials. It pairs with rose, jasmine, violet and oud. Mysore-rich sandalwood defines the great vintage milky-woody orientals and lends a creamy woody heart to countless smooth, skin-like compositions.
Good to know
Indian sandalwood was over-harvested nearly to collapse; standing trees and trade fall under strict Indian government license and auction control. Genuine aged Mysore oil has grown rare and costly, pushing perfumers toward plantation-grown Australian Santalum album and synthetics like Javanol.
Cashmere Wood
A made-up wood that smells of warm skin
What it is
A fantasy note with no botanical source: no cashmere tree exists. The scent is the synthetic molecule Cashmeran, chemically DPMI, made around 1970 by John Hall at IFF. It is a polycyclic ketone built entirely through laboratory chemistry, a solid melting near room temperature.
How it smells
Soft, diffusive and warm, sitting between woody and musky. Dry blond wood and clean white musk are wrapped in spicy, balsamic, faintly vanillic warmth, with an old-paper and pine-resin edge. In trace amounts it reads salty and abstract, like sun-warmed skin.
In perfumery
A workhorse base note prized for radiance and long wear, lending a velvety wool-like haze that smooths sharp edges and stretches a composition. It pairs with amber, iris, rose and white musks, and anchors Donna Karan Black Cashmere alongside countless modern woody-musk scents.
Good to know
Brands often dress Cashmeran up as Cashmere Wood, Cashmere Musk or Blond Woods on note pyramids to sound natural, though no such plant exists. It is so self-sufficient that perfumers use it as a near-finished accord alone, blurring the line between molecule and material.
Rose Absolute
The queen of flowers, fresh and endlessly deep
What it is
Perfumery rose comes mainly from two species: Rosa damascena, grown in Bulgaria's Valley of Roses and in Turkey, and Rosa centifolia from Grasse. Whole blossoms are picked by hand from before sunrise into the morning, then either water-distilled and cohobated into rose otto or solvent-extracted into a deeper, redder absolute via a waxy concrete.
How it smells
Rich, fresh and unmistakably floral, with honeyed sweetness and a green, dewy lift. Beneath sit spicy, fruity and faintly tea-like facets, and in the absolute a darker, jammy depth. Rose otto opens crisp and bright; the absolute reads warmer, smokier and more sensual.

It takes roughly three to four thousand kilograms of hand-picked blossoms to distill a single kilogram of rose otto, which helps explain why the oil can rival precious metals in price. Picking begins before sunrise and runs into the morning, while the flower still holds its oil.
